Brasserie Cantillon
Brasserie Cantillon a été fondée en 1900 dans le quartier d’Anderlecht à Bruxelles par Paul Cantillon. Aujourd’hui dirigée par Jean-Pierre Van Roy et sa famille, c’est la dernière brasserie de lambic traditionnelle encore en activité dans les limites de la ville de Bruxelles. Chaque bière est fermentée spontanément — sans levure cultivée, sans contrôle de température — et vieillie en fûts de bois pendant un à trois ans avant assemblage. La gamme comprend la Gueuze classique, la Kriek aux cerises Schaerbeek, la Rosé de Gambrinus, et des éditions spéciales très recherchées : Blabaer, Saint Lamvinus, Nath, Grand Cru Bruocsella.
