Tasting Profile
Cantillon Sang Bleu (2025) pours a deeply vivid blood-red to garnet hue, crowned by a delicate pinkish-rose head that clings elegantly to the glass with surprising retention. The nose is immediately arresting: ripe haskap berries lead the charge, intertwined with jammy blueberry, wild cherry, dried hay, and a gentle barnyard funk that is unmistakably Cantillon. On the palate, this is a fruit-forward lambic of rare balance and complexity. The mouthfeel is soft and pillowy yet lively with fine carbonation, offering a medium body that carries the beer’s considerable depth with effortless grace.
Sweetness from the naturally tart Camerise berries is beautifully counterposed by the beer’s inherent lambic acidity and a firm, drying astringency — a hallmark of the brewery’s craft. Flavours of tart cranberry, boysenberry, red grape skin, honeysuckle, and a whisper of dusty oak evolve through a long, refreshing mid-palate. The finish is bone-dry and thirst-quenching, with berry skin tannins that linger alongside subtle funk. Both approachable now and rewarding with further cellaring, Sang Bleu 2025 is a benchmark fruit lambic from Brussels’ most revered spontaneous fermentation house. Food Pairing
Cantillon Sang Bleu 2025 lambic fruit pairs beautifully with a ripe, washed-rind cheese such as Époisses de Bourgogne — its creamy funk harmonising perfectly with the beer’s barnyard character and berry-driven acidity. Equally compelling alongside a classic duck magret with cherry reduction, where the fruity tartness and dry finish cut through richness and mirror the dish’s red-fruit notes. A rare pairing experience for the adventurous table.
