Tasting Profile
Le Plaisir 2022 is a singular expression of the marriage between lambic tradition and Italian viticulture. Born from a collaboration between Brasserie Cantillon and Cascina Degli Ulivi, it blends nine different grape pomaces with two-year-old lambic, the grapes having undergone nine months of pellicular maceration before blending. The result is a luminous, pale golden beer with aromas of white grape skin, lemon zest, wildflowers, hay, and gentle chalk. On the palate, tart lactic acidity frames notes of gooseberry, fresh-cut grass, elderflower, and a delicate tannic grip — more fine Burgundy than conventional sour beer.
Food Pairing
Le Plaisir 2022 pairs beautifully with fresh, young chèvre or Brie de Meaux — the wine-like acidity and grape tannins echo the minerality of the cheese. It is equally at home alongside a delicate crudo of sea bass with lemon oil and microherbs, where its bright sourness and dry finish lift every nuance of the dish.
