Cantillon Piacere 2022 is a singular expression from Brussels’ legendary spontaneous fermentation house, born from a collaboration with Italian importer Fuori Mondo. Two-year-old lambic is married to Ciliegiolo — a Sangiovese-adjacent Italian grape variety whose name literally means ‘cherry’ — yielding a beer of striking vinous depth. Expect a hazy ruby pour with aromas of red cherry, grape skin, dried flowers, and subtle barnyard funk. On the palate, restrained tartness gives way to ripe red fruit, a whisper of wood, and a dry Brunello-like finish that blurs the line between lambic and fine wine.

Food Pairing

Pair with a hand-sliced Culatello di Zibello or aged Bresaola to echo the wine-like red fruit character, letting the lambic’s acidity cut through the fat. Alternatively, serve alongside a wedge of aged Comté or Pecorino di Fossa — the nutty, crystalline cheese amplifies the grape skin tannins and brings out the beer’s long, dry finish.
