Cantillon Sang Bleu 2023 is a blood-red fruit lambic of extraordinary complexity, built on a base of spontaneously fermented Brussels lambic macerated with haskap — the elusive blue honeysuckle berry from Québec. The result is a vivid interplay of wild berry intensity and classic Cantillon tartness: layers of boysenberry, blueberry, cranberry, and a subtle vinous depth reminiscent of pinot noir. Acidity is bright and refined, never aggressive, while a mellow astringency anchors the fruit. Powerful yet approachable, it stands among the brewery’s most seductive seasonal releases.
Food Pairing
