The Cantillon Classic Gueuze 2024 pours a luminous, pale golden straw hue with exceptional clarity, crowned by a fine white head that dissipates slowly and leaves delicate lacework along the glass. On the nose, the aromatic profile is immediate and expressive: tart green apple and lemon zest lead, followed by notes of dried hay, earthy barnyard funk, and a faint vinous grape-must undertone that speaks to the wild Senne Valley yeast lineage. The palate is dry, lean, and vibrantly carbonated — prickly effervescence lifts stone fruit, citrus peel, and a subtle musty oak character that evolves as the beer warms.
Bitterness is negligible but acidity is pronounced, structured, and beautifully calibrated. The finish is long, bone-dry, and refreshing, with a lingering mineral and lactic tang that invites the next sip.
