Domaine Roger Sabon — Guardians of Châteauneuf Tradition
Domaine Roger Sabon represents five generations of winemaking excellence in Châteauneuf-du-Pape, with roots stretching back to 1921. The estate spans approximately 17 hectares across some of the appellation’s most privileged parcels, including coveted plots in the lieu-dit La Crau, where ancient galets roulés (rounded stones) retain daytime heat and nurture Grenache of exceptional concentration and aromatic complexity.
Under the stewardship of brothers Didier and Jean-Jacques Sabon, the domaine has earned recognition for producing wines that honour tradition while expressing the distinctive character of each vintage. The “Secret des Sabon” cuvée represents a carefully guarded selection from their finest parcels, bottled only in exceptional years. The Treasured Galets of Châteauneuf
The Secret des Sabon is sourced from the domaine’s oldest vine parcels, planted on the legendary galets roulés terroir that defines Châteauneuf-du-Pape’s eastern plateau. These heat-retaining Alpilles stones sit atop red clay and sand, creating ideal conditions for slow, complete ripening. The blend follows traditional Châteauneuf proportions, with old-vine Grenache forming the core, supported by Mourvèdre for structure and Syrah for aromatic complexity and spice.
Vinification & Ageing
Traditional Methods, Uncompromising Selection
The Secret des Sabon follows rigorous traditional protocols: hand-harvesting at optimal phenolic maturity, careful sorting, and fermentation in cement cuves with indigenous yeasts. Maceration extends for three to four weeks to extract the full depth of flavour and noble tannins from the old vines. The wine is then aged for 18 to 24 months in a combination of large oak foudres and smaller barriques, allowing the wine to develop complexity while preserving the purity of fruit and expression of terroir that defines great Châteauneuf-du-Pape.
