Henri Boillot ferments his Premier Cru Chardonnays in French oak barrels with a judicious proportion of new wood, typically between 25-30%, allowing the terroir to express itself without overwhelming oak influence. Additionally, the wines undergo full malolactic fermentation and remain on fine lees with regular bâtonnage to develop texture and complexity. The élevage extends approximately 12-14 months before bottling, a period during which the wine integrates oak and develops its signature tension.
The winemaker employs whole-cluster pressing and natural settling to preserve the purity of fruit expression. Furthermore, Boillot’s meticulous approach ensures minimal intervention during élevage, thus allowing the limestone minerality of Les Pucelles to shine through clearly.
