Extended Lees Aging to Plénitude
After traditional méthode champenoise fermentation and careful assemblage, Dom Pérignon undergoes a minimum of eight years on the lees before its initial release. The P2 expression, however, remains in the cellars for approximately 15 years total—nearly double the aging of the first release—allowing autolytic processes to weave extraordinary depth and silkiness into the wine’s fabric. This prolonged contact with spent yeasts develops brioche, toast, and honeyed complexity while maintaining the vibrant acidity that defines great Champagne.
