Grand Cru Pinot Meunier from Gueux
La Closerie is crafted entirely from Pinot Meunier grown in the Grand Cru village of Gueux, situated on the Montagne de Reims. The vineyard sits on deep chalk soils that provide excellent drainage and mineral complexity. While Pinot Meunier is often relegated to a supporting role in traditional Champagne blends, Prévost proves it can achieve Grand Cru greatness when farmed with care and low yields. His vines are cultivated sustainably, with minimal treatments and hand-harvesting to preserve fruit integrity.
Vinification
Low Intervention, Extended Ageing
Prévost’s winemaking philosophy centres on allowing the terroir to speak. Fermentation occurs in old oak foudres using indigenous yeasts, with nomalolactic fermentation to preserve natural acidity and freshness. The wine is based on a single vintage but incorporates a small percentage of reserve wines from previous harvests, maintained in a perpetual reserve system. Extended ageing on lees—often five years or more before disgorgement—builds remarkable depth and complexity.
Dosage is kept minimal, typically around 2-3 g/L, allowing the wine’s natural structure and fruit intensity to shine. Each bottle is disgorged to order shortly before release, ensuring maximum freshness and vitality. The resulting Champagne is vibrant yet profound, combining youthful energy with the complexity of extended lees contact.
Tasting Notes
Precision, Texture, and Tension
La Closerie reveals itself in layers: an initial burst of red apple, white flowers, and citrus zest gives way to deeper notes of brioche, hazelnut, and crushed chalk. The palate is remarkably textured, combining a creamy mousse with vibrant acidity and saline minerality. There’s a compelling tension between richness and precision, with flavours of ripe orchard fruit, lemon curd, and subtle spice unfolding across a persistent, chalky finish. The wine’s depth and complexity invite contemplation, yet it remains wonderfully fresh and energetic—a testament to Prévost’s mastery of balance.

Serve La Closerie slightly warmer than typical Champagne to appreciate its textural complexity and aromatic depth. This wine deserves food that matches its sophistication: think roasted turbot with beurre blanc, lobster thermidor, or aged Comté. It also shines alongside earthy dishes like roasted chicken with morels or Jerusalem artichoke velouté.
