Terroir & Grapes
Grand Cru Parcels Across Champagne
Dom Pérignon sources exclusively from premier and grand cru vineyards across the Champagne region, selecting parcels that express the vintage’s character with precision. The 2002 vintage benefited from a warm, dry growing season that produced grapes of exceptional ripeness and concentration, with chalky soils imparting the mineral backbone essential to Dom Pérignon’s architectural structure. Each plot is vinified separately to preserve terroir identity before the chef de cave orchestrates the final assemblage—a meticulous selection typically drawing from 40-50 crus.

Vinification
Extended Lees Aging to Plénitude
After traditional méthode champenoise fermentation and careful assemblage, Dom Pérignon undergoes a minimum of eight years on the lees before its initial release. The P2 expression, however, remains in the cellars for approximately 15 years total—nearly double the aging of the first release—allowing autolytic processes to weave extraordinary depth and silkiness into the wine’s fabric. This prolonged contact with spent yeasts develops brioche, toast, and honeyed complexity while maintaining the vibrant acidity that defines great Champagne.
Disgorgement occurs only when the wine reaches its second peak of harmony—the Plénitude moment when maturity and energy achieve perfect equilibrium. A restrained dosage preserves the wine’s precision and allows the vintage’s authentic voice to resonate through layers of evolved character, tertiary aromatics, and seamless mousse integration.
Tasting Notes
A Second Life of Profound Complexity
The 2002 P2 reveals a deep golden hue with persistent, fine bubbles that speak to its extended maturation. The nose opens with mesmerizing complexity: ripe stone fruits—apricot, white peach—intertwine with toasted brioche, honey, and subtle notes of tobacco leaf and dark chocolate. The palate is both powerful and graceful, delivering concentrated citrus, baked apple, and candied orange peel supported by chalky minerality and creamy mousse. The finish extends magnificently, showing evolved spice notes, salted almond, and that signature Dom Pérignon tension between richness and crystalline precision. This is Champagne at its most profound—a meditation on time’s transformative power.
