The nose opens with an immediately recognizable tartness underpinned by fresh rhubarb stalks, lemon zest, delicate elderflower, a touch of earthy barnyard funk, and the subtle mustiness characteristic of wild Brussels fermentation. On the palate, the mouthfeel is light to medium-bodied with a crisp, sprightly effervescence that delivers a lively frothiness before yielding to a notably dry finish. Sweetness is kept to a minimum — this is a beer of tension and acidity rather than fruit-forward sweetness.
