Cantillon Kriek 100% Lambic (2023) pours a vivid deep ruby-crimson with violet undertones, topped by a thin, airy blush-pink head that dissipates swiftly and leaves virtually no lacing — entirely characteristic of authentic spontaneous fermentation. On the nose, expect an expressive and complex bouquet: sun-ripened tart Morello cherries lead, woven with earthy barnyard funk, aged oak, wild yeasty phenols, and a subtle vinous mustiness that speaks directly to the brewery’s century-old lambic tradition. On the palate, the mouthfeel is light-bodied yet assertively lively, with a gentle but persistent effervescence driving the acidity forward.
A bracing wave of sour cherry arrives first, immediately undercut by the unmistakable dryness of aged lambic — bone-dry, puckering, and utterly uncompromising.
