Cantillon Grand Cru Bruocsella Lambic Bio (2022) pours a clear, light golden hue with virtually no head and zero carbonation — a signature trait of this deliberately still, wine-like lambic. The absence of effervescence is intentional: with no secondary fermentation in the bottle, the liquid settles into a serene, almost meditative stillness that immediately sets it apart from every other beer in the Cantillon portfolio. On the nose, expect a complex bouquet of green apple, white grape, dried straw, soft leather, and a subtle oxidative earthiness reminiscent of aged Burgundy or dry Fino Sherry.
The palate is medium-bodied, silky, and dry, with a restrained but persistent tartness woven through notes of ripe citrus, orchard fruit, damp oak, and a barnyard-laced Brettanomyces character that deepens with warming. The acidity is present yet measured, elegant rather than aggressive, allowing the more mellow, vinous aspects to hold their ground. The finish is long, dry, and lightly tannic, with a lingering mineral quality.
