Poured from a capped and corked 750ml bottle, the 2025 Grand Cru Bruocsella presents a lightly hazy golden-amber hue with virtually no head and zero carbonation — intentional and utterly true to form. This is a still lambic in every sense, demanding patience and an open mind from the drinker. The nose is contemplative and wine-like: dried straw, white grape, oxidative apple, subtle leather, and a mineral earthiness underscored by wild Brettanomyces character. On the palate, the mouthfeel is medium-bodied, smooth, and almost oily despite the flatness.
Sweetness is restrained, bitterness practically absent; instead, the focus lands on a layered interplay of vinous acidity, barnyard funk, green orchard fruit, and lightly tannic oak. The single fermentation — brewed from one brewing season and aged three years in barrel — gives Bruocsella a profile unlike any other Cantillon release.
