Side Project Brewing has built one of the most revered barrel-aging programs in American craft beer, and Revived stands as a compelling chapter in that ongoing story. Poured into the glass, this deep, near-opaque ale displays a rich mahogany-to-midnight hue with a thin, mocha-tinted collar that settles gracefully, a hallmark of the brewery’s meticulously conditioned releases. On the nose, expect the layered complexity that defines Side Project’s stout portfolio: waves of dark chocolate and roasted espresso intertwine with notes of vanilla, dried dark fruit, and a whisper of charred oak drawn from extended barrel contact.

The palate is generous and full-bodied, coating the tongue with a velvety, almost silken texture that balances a measured sweetness against restrained bitterness. Flavors of bittersweet cocoa, toffee, and toasted grain lead into nuances of stone fruit and leather before a long, warming finish that speaks to deliberate barrel selection. Much like Redux, we are taking one of our favorite Derivations and bringing it to you as a non-BA version. Revived brings D8 back, our Missouri Imperial Stout finished on Coconut Flakes, Vanilla Beans and Sump Coffee. For Revived, we used raw flaked and toasted coconut before infusing this Imperial Stout with Sump’s Melting Darkness Coffee and Indians Vanilla Beans to bring back one of our favorite Derivation combinations.

Food Pairing

Side Project Revived pairs magnificently with a wedge of aged Époisses de Bourgogne — its funky, washed-rind intensity meeting the beer’s roasted depth in perfect tension. For a sweeter contrast, a flourless dark chocolate torte with a salted caramel centre is equally rewarding. Then allowing the barrel-aged stout character of Side Project Revived to lift and frame each richly bittersweet mouthful.
