Christophe Sabon vinifies each parcel separately using traditional techniques that respect the fruit’s integrity. The grapes undergo whole-cluster fermentation in concrete tanks, followed by gentle extraction to preserve the wine’s natural elegance. Subsequently, the wine matures in a combination of large foudres and smaller oak barrels for approximately 12 to 15 months. This élevage allows the wine to integrate harmoniously while retaining the vibrant fruit character that defines the vintage.
