The estate ferments each plot separately in 100% new French oak barrels, allowing the wine to develop complexity while preserving the individual character of each parcel. Additionally, fermentation proceeds naturally until the yeasts can no longer tolerate the rising alcohol levels, typically halting around 13.5-14% alcohol while leaving substantial residual sugar. The wine then undergoes a lengthy élevage of approximately six months in barrel, during which the cellar team continuously tastes and evaluates each cask, ultimately selecting only the finest barrels for the grand vin and declassifying the remainder.

The 2015 vintage in Sauternes proved exceptional, though it required adaptation to unusual conditions. Indeed, the growing season featured very early flowering followed by a summer marked by heat spikes interspersed with occasional heavy downpours. However, August storms triggered early botrytis development, and the weather remained consistently warm throughout September and October, creating ideal conditions for noble rot concentration. Consequently, Yquem commenced its earliest harvest since 1893, picking between 11 September and 16 October and capturing berries at optimal botrytis infection.
