Tasting Profile
Here Be Monsters – Sazerac Rye pours a dense, opaque obsidian black with the barest ring of tan foam clinging to the glass, testament to the enormous body within. The nose opens with assertive waves of dark chocolate, dried black cherry, toasted oak, baking spice, and the unmistakable peppery rye character imparted by Sazerac barrels. On the palate, the beer is extraordinarily full-bodied — viscous and coating — with a restrained sweetness that never tips into cloy. Rich milk chocolate and espresso are front and centre, underpinned by a distinctive rye spice and anise note that sets this variant firmly apart from bourbon-barrel editions.
The finish is long, warming, and dryly bitter, with lingering rye pepper and dark cocoa. Cerebral Brewing, based in Denver, Colorado, built Here Be Monsters as a vehicle for showcasing exceptional single-barrel spirit sources; the Sazerac edition stands as one of its most distinctive expressions. Exceptional aging potential of five or more years. More details at https://untappd.com/b/cerebral-brewing-here-be-monsters-experimental/5441813.
Food Pairing
Cerebral Brewing Here Be Monsters Sazerac pairs magnificently with a rich 70% dark chocolate ganache tart, where the rye spice and cocoa notes mirror each other in harmony. Equally compelling alongside a slow-roasted beef short rib glazed with cherry reduction — the barrel-aged imperial stout’s dark fruit and peppery backbone cutting through the richness of the meat with precision.
