The delicate pinkish tint and brilliant clarity invite immediate comparison to a fine natural Burgundy rather than a conventional beer. On the nose, the 2024 vintage is immediately arresting: crushed red grape skins, ripe Merlot fruit, dried rose petals, a whisper of wet barnyard funk, and a faint mineral undercurrent that recalls the terroir of Saint-Émilion and Pomerol, the very vineyards that supply Cantillon’s grapes.
The palate is medium-light in body with a prickly, gentle carbonation that lifts the flavours beautifully. Sweet-tart macerated berry fruit and dark cherry open first, followed by a complex, drying tannic grip and a vinous oakiness from the Bordeaux barrel maceration. Low bitterness yields to a refreshing lactic acidity mid-palate. The finish is long, dry, and deeply satisfying — sour cherry skin, subtle salinity, and an earthy brett note that lingers.
