Cantillon Kriek 100% Lambic Bio (2019) pours a deep ruby-garnet hue with a fleeting pale-pink head that dissipates quickly, leaving minimal lacing — entirely typical of the style and a hallmark of this Brussels icon. On the nose, expect a vivid bouquet of tart Morello cherries, barnyard funk, vinous red fruit, earthy brett, and a faint whiff of damp cork and aged oak. The palate is immediately captivating: a lively, puckering acidity frames wild cherry, fermented stone fruit, and hints of cherry pit alongside a subtle leathery earthiness.
Carbonation is lively, lending a crisp, almost effervescent mouthfeel that cuts through the tartness with precision. Sweetness is restrained, allowing the organic sour cherries — sourced from Turkey and macerated at 200g per litre of lambic — to express themselves in full complexity rather than jammy excess. The finish is long, bone-dry, and delightfully sour, with a lingering cherry-skin astringency.
