Cantillon Gueuze (2025) pours a radiant golden-yellow hue with faint orange highlights and a delicate, fine-bubbled white head that settles gracefully into a persistent collar — a hallmark of patient, traditional méthode gueuze. The carbonation is lively yet refined, rising in elegant streams through the crystal-clear body. On the nose, the 2025 vintage delivers a captivating layering of green apple, fresh lemon zest, damp hay, earthy oak, and a characteristic Cantillon funkiness — faint barnyard notes interwoven with an almost mineral, stony quality. The palate is medium-light in body, animated by prickly effervescence that carries a brisk, lactic acidity front and centre.
Flavours of tart citrus, unripe pear, wheat bread, and a delicate sourness unfold in measured waves, underpinned by dry, vinous complexity. Bitterness from aged hops is subtle but present, lending structure to the finish. The finish is long, bone-dry, and impressively clean, with lingering citrus peel and earthy mineral notes. At 5.5% ABV, it is eminently drinkable young but rewards cellaring — Cantillon recommends enjoyment within 20 years of bottling. A benchmark of living, evolving spontaneous fermentation. Cantillon Gueuze 2025 is a sublime match for aged Belgian cheeses such as Aged Gouda or Herve, whose creamy sharpness echoes the beer’s lactic acidity and barnyard complexity.
