Cantillon Fou’ Foune 2022 pours a hazy, pale golden-amber hue with a wispy, evanescent white head that dissipates quickly — characteristic of the spontaneous fermentation process at the heart of every Cantillon release. The nose is immediately captivating: wave upon wave of ripe Bergeron apricot, fresh peach skin, lemon zest, and a delicate barnyard earthiness underpinned by the wild Brettanomyces character that defines Brussels lambic tradition. On the palate, the mouthfeel is light to medium-bodied with a lively, prickling carbonation that lifts the flavour profile beautifully. The sweetness is restrained — this is not a fruit beer in the conventional sense — yielding instead to a vibrant, mouth-watering acidity that showcases the apricot in its most authentic, sun-ripened expression.
Notes of green apple, white wine, and a whisper of hay weave through the mid-palate alongside a gentle tannic grip from the extended lambic aging. The finish is long, dry, and refreshingly tart, leaving a lingering stone-fruit aftertaste that invites another sip.
