Cantillon Blåbær Lambik 37.5 cl 2019 pours a deep, moody violet-purple with faint pink highlights at the edges and a delicate rose-tinted head that settles quickly to a thin, fine collar — classic for a naturally carbonated fruit lambic. The nose is arrestingly vivid: ripe and slightly underripe blueberries lead the way, underpinned by sharp lemon zest, earthy barnyard funk, a whisper of wild brett, and a light tannic grape-skin note that signals the quality of the fruit maceration. On the palate, the mouthfeel is crisp, prickly, and refreshingly lean — no sweetness dominates here.
