The Estate

Château Canon — Premier Grand Cru Classé Excellence

Château Canon stands as one of Saint-Émilion’s most distinguished estates, classified Premier Grand Cru Classé B in the appellation’s 2012 classification. Founded in the 18th century, the château took its current name in 1760 when Jacques Kanon, a naval officer and privateer, acquired the property and established its reputation for producing wines of exceptional finesse and longevity. The estate’s 22 hectares of vineyards occupy a privileged position on the limestone plateau and côtes of Saint-Émilion, adjacent to the famous Château Ausone.

Since its acquisition by the Wertheimer family (owners of Chanel) in 1996, Château Canon has undergone a renaissance, with meticulous vineyard management and significant investment in both cellar and terroir. Under the direction of Nicolas Audebert, the estate has reclaimed its position among Saint-Émilion’s elite, crafting wines that combine classical Right Bank elegance with remarkable depth and ageing potential. This lot of six bottles represents an ideal format for collectors seeking to cellar one of Bordeaux’s most refined expressions.

Terroir & Grapes

Limestone Plateau Purity

Château Canon’s vineyards benefit from exceptional terroir on Saint-Émilion’s limestone plateau and south-facing slopes, where ancient marine sediments create ideal conditions for Merlot. The shallow topsoil over limestone bedrock naturally limits yields and concentrates flavors, while providing excellent drainage and a distinctive mineral character. The estate’s Merlot-dominant blend is complemented by Cabernet Franc, which adds aromatic lift and structural refinement to the wine’s naturally opulent texture.

Vinification & Ageing

Precision and Patience

At Château Canon, winemaking emphasizes respect for the fruit and terroir through gentle extraction and meticulous parcel-by-parcel vinification. Each plot is harvested at optimal ripeness and fermented separately in temperature-controlled tanks, allowing the winemaking team to preserve the distinct character of different vineyard sites. Malolactic fermentation occurs in barrel, fostering seamless integration between fruit and oak from the earliest stages.

The wine is aged for 18 months in French oak barriques, with approximately 50-60% new wood, striking a balance between structure and elegance. During élevage, regular racking and careful monitoring ensure the wine develops complexity while retaining its signature purity and precision. The result is a wine that marries the richness of Right Bank Merlot with remarkable finesse and mineral definition.

Vintage Character

2019 — A Year of Classical Elegance

The 2019 vintage in Bordeaux’s Right Bank delivered wines of remarkable balance and classical proportions, following a growing season marked by moderate temperatures and well-timed rainfall. A warm, dry summer allowed for slow, even ripening, while cooler nights in September preserved natural acidity and aromatic freshness. At Château Canon, the limestone terroir proved particularly well-suited to the vintage conditions, yielding fruit of exceptional concentration without heaviness. The 2019 combines the vintage’s characteristic elegance with Canon’s signature mineral precision, creating a wine of profound harmony and considerable cellaring potential.

Tasting Notes

Refined Power and Limestone Grace

Château Canon 2019 opens with an alluring bouquet of crushed blackberries, dark cherries, and violets, underscored by subtle notes of graphite, cedar, and sweet tobacco. On the palate, the wine reveals exceptional density and concentration, yet maintains a sense of weightless elegance thanks to its limestone-derived mineral tension and vibrant acidity. Velvety tannins frame layers of black fruit, dark chocolate, and spice, while a distinctive chalky minerality runs through the long, precise finish. This is Canon at its most harmonious—powerful yet refined, rich yet graceful, with the structure to evolve magnificently over two decades or more.

Château Canon 2019 deserves the company of equally refined cuisine. Pair this Premier Grand Cru Classé with roasted rack of lamb with herb crust, truffle-enhanced beef Wellington, or aged Comté cheese. The wine’s mineral precision and silky tannins make it a magnificent match for wood-fired game birds, côte de bœuf with bone marrow, or wild mushroom risotto finished with Parmigiano-Reggiano. For those patient enough to cellar, this wine will reward with decades of evolution, developing tertiary notes of forest floor, leather, and dried roses while maintaining its core of elegant fruit and limestone freshness.
