Virvatuli, meaning ‘will-o’-the-wisp’ in Estonian, is a flickering, otherworldly take on the ancient gruit tradition reimagined at imperial strength. Brewed without hops and instead leaning on foraged herbs and botanicals, this barrel-aged expression layers earthy, resinous bitterness over a syrupy, full-bodied malt base. Expect notes of toffee, dark plum, raisin and dark chocolate, lifted by herbal warmth and a whisper of espresso. Time in oak adds vanilla, soft coconut and gentle whiskey heat, weaving through the wild herbal core. Decadent, mysterious and quintessentially Põhjala, it glows with northern forest character.

Pair with slow-braised wild boar or venison stew, where the herbal gruit character and barrel warmth echo the gamey, forest-driven flavors. For dessert, try a dark chocolate and fig tart with sea salt, allowing the beer’s toffee, raisin and oak-vanilla notes to amplify the richness while cutting through the cocoa.

À propos de la brasserie Põhjala

La brasserie Põhjala a été fondée en 2011 à Tallinn, en Estonie, par quatre passionnés de bière qui ont ensuite été rejoints par le brasseur en chef Chris Pilkington. Le nom de la brasserie se traduit par “royaume du nord” en estonien, reflétant son lien profond avec la région nordique et les forêts d'Estonie. Põhjala s'est imposée comme la plus grande brasserie artisanale des États baltes, se distinguant par l'importance qu'elle accorde aux porters, au vieillissement en fût et à l'incorporation d'ingrédients issus de la forêt estonienne dans son processus de brassage.

La première bière de la brasserie, Öö Imperial Baltic Porter, a été brassée à façon avant que l'entreprise n'ouvre son établissement d'origine dans le quartier de Nõmme à Tallinn en avril 2014. Suite à une croissance rapide, Põhjala a investi près de 4,9 millions d'euros en 2018 pour déménager dans une brasserie ultramoderne dans le quartier Noblessner, avec une capacité de 1 200 hectolitres par mois et une vaste salle de dégustation avec 24 robinets. Põhjala a la particularité d'être la seule brasserie balte à figurer dans la prestigieuse liste “top 100” des brasseries mondiales de Ratebeer, consolidant ainsi sa réputation de force motrice de la bière artisanale européenne.
