The Vieilles Vignes cuvée draws from the estate’s oldest parcels, planted on the classic galets roulés—large, rounded stones—that define Châteauneuf-du-Pape’s most celebrated terroirs. Additionally, the vineyard sites feature varying proportions of sand, clay, and limestone beneath these heat-retaining stones. These ancient vines, some exceeding 60 years of age, naturally produce concentrated fruit with remarkable depth. Meanwhile, the appellation’s warm Mediterranean climate and mistral winds create ideal ripening conditions while maintaining freshness.

Traditional Methods, Meticulous Élevage
Christophe Sabon vinifies each parcel separately using traditional techniques that respect the fruit’s integrity. The grapes undergo whole-cluster fermentation in concrete tanks, followed by gentle extraction to preserve the wine’s natural elegance. Subsequently, the wine matures in a combination of large foudres and smaller oak barrels for approximately 12 to 15 months.
