Grapes are hand-harvested at optimal maturity, with rigorous sorting to ensure only the finest berries enter the cellar. Fermentation occurs with indigenous yeasts in temperature-controlled concrete tanks, allowing each parcel to express its unique personality while gentle extraction preserves the wine’s finesse and purity of fruit.

The wine is aged in a combination of older oak barrels and concrete tanks for approximately 18 months, a period that allows the different varieties to marry harmoniously while preserving the vibrant fruit character and spice notes that define great Châteauneuf-du-Pape.
