The Avril family’s rigorous approach combines traditional Châteauneuf methods with meticulous vineyard management across 32 hectares spread over 24 different parcels throughout the appellation. The wine undergoes natural malolactic fermentation before the critical assemblage phase, where Paul-Vincent Avril crafts the final blend based on each vintage’s character.
Élevage takes place in large, neutral oak foudres for approximately 12 to 18 months, avoiding new oak entirely to allow the wine’s terroir expression and varietal character to shine through unmasked. This restrained approach to oak ageing is central to the Clos des Papes philosophy, resulting in wines of remarkable purity and transparency that age gracefully for decades.
