On the nose, this 2017 vintage opens with intoxicating waves of ripe Bergeron apricot, sun-warmed stone fruit, a whisper of white peach, subtle barnyard brett, and delicate hay. The aromatic intensity is immediately captivating, with the fruit displaying a complexity that sets Cantillon apart from all other producers in the Senne Valley tradition. On the palate, the mouthfeel is lean, lively, and effervescent — naturally carbonated and bone dry.
