Verkostungsprofil
The nose opens with dried figs, dark raisins, and brown sugar, accented by subtle Christmas spice and alcohol warmth. A complex backbone of toasted bread and caramel malt emerges beneath layers of dark fruit. The palate is densely textured and vinous, delivering concentrated flavors of plum compote, date syrup, and molasses, interwoven with Belgian yeast phenolics that contribute peppery spice and earthy complexity. Oak-like tannins provide structure without heaviness. The finish is long and warming, fading slowly with lingering notes of cocoa, burnt sugar, and a gentle alcoholic glow that invites contemplation.
Lebensmittel-Paarung
Pair with aged Chimay or Orval cheese, where the beer’s fruit-forward sweetness and carbonation cut through creamy richness while complementing nutty, earthy flavors. Alternatively, serve alongside slow-braised wild boar or venison stew with dried fruits and juniper, where the beer’s malty depth and dark fruit character echo the gamey, savory-sweet complexity of the dish.
About Abbaye Notre-Dame de Saint-Rémy (Rochefort)
Abbaye Notre-Dame de Saint-Rémy, better known as Rochefort, stands among the most revered Trappist breweries in the world. Located in the Belgian Ardennes near the town of Rochefort, the abbey has been home to monks since 1230, though brewing operations as they exist today were established in the early twentieth century. The monastery follows the strict Authentic Trappist Product regulations, meaning all beer is brewed within the abbey walls under monastic supervision, with profits supporting the community and charitable works rather than commercial gain.
Rochefort produces three distinctive Belgian strong dark ales, distinguished by their colored bottle caps and numbered designations: 6, 8, and 10. These beers are characterized by exceptional complexity, featuring deep malty sweetness, dark fruit notes, and a contemplative depth that reflects their monastic origins. The brewing process relies on traditional methods, with the monks maintaining a deliberately limited production scale that prioritizes quality over quantity. This scarcity, combined with the beers’ extraordinary character, has elevated Rochefort to legendary status among beer enthusiasts worldwide. The brewery remains one of only a handful of certified Trappist breweries globally, representing an unbroken tradition of monastic craftsmanship.
