About Abbaye Notre-Dame de Saint-Rémy (Rochefort)
Abbaye Notre-Dame de Saint-Rémy, better known as Rochefort, stands among the most revered Trappist breweries in the world. Located in the Belgian Ardennes near the town of Rochefort, the abbey has been home to monks since 1230, though brewing operations as they exist today were established in the early twentieth century. The monastery follows the strict Authentic Trappist Product regulations, meaning all beer is brewed within the abbey walls under monastic supervision, with profits supporting the community and charitable works rather than commercial gain.
Rochefort produces three distinctive Belgian strong dark ales, distinguished by their colored bottle caps and numbered designations: 6, 8, and 10. These beers are characterized by exceptional complexity, featuring deep malty sweetness, dark fruit notes, and a contemplative depth that reflects their monastic origins. The brewing process relies on traditional methods, with the monks maintaining a deliberately limited production scale that prioritizes quality over quantity.
