Tasting Profile
Perennial Artisan Ales’ Barrel-Aged Fantastic Voyage 2025 pours an impenetrable pitch-black with a fleeting mocha-tinged head and long-lasting oily legs on the glass — a hallmark of this St. Louis heavyweight. On the nose, waves of booze-soaked whiskey barrel staves open the experience, quickly giving way to rich dark chocolate, subtle toasted coconut, vanilla cream, and a whisper of roasted espresso. As the beer warms in the glass, the aromatics deepen and intertwine in compelling fashion. The palate is full-bodied and luxurious, with a thick, almost viscous mouthfeel that coats every surface.
A restrained sweetness from the lactose base and coconut adjunct balances the assertive barrel character, while dark fruit and bittersweet baker’s chocolate anchor the mid-palate. Bitterness is low but present, rounding out what could otherwise be an overwhelmingly sweet experience. The finish is long and warming, with whiskey heat lingering alongside fudgy chocolate and a faint whisper of dried coconut. Despite its formidable strength, this beer drinks with remarkable elegance. A candidate for cellaring, though utterly rewarding upon release. Explore more check-ins on Untappd.
Food Pairing
The Perennial Barrel-Aged Fantastic Voyage 2025 pairs magnificently with a dark-chocolate lava cake or a rich mousse au chocolat, where the lactose body and coconut sweetness echo the dessert’s intensity. Equally compelling alongside an aged Comté or Gruyère, where the nuttiness and crystalline texture of the cheese meet the whiskey barrel complexity and roasted depth head-on. A rewarding after-dinner ritual.
