Hakushu — The Forest Distillery of the Southern Alps
Founded by Suntory in 1973 in the forested Kai region of Yamanashi Prefecture, Hakushu sits at 700 metres elevation in the Japanese Alps, surrounded by dense woodland and fed by snowmelt from Mount Kaikomagatake. The distillery was conceived as a counterpoint to Yamazaki’s richer Osaka profile — here, the mountain water and clean alpine air shape a lighter, more herbal house character. Hakushu operates twelve pot stills across two stillhouses, allowing for granular control of spirit styles, from lightly peated to delicately floral expressions.
The distillery’s reputation rests on precise layering of fresh, green notes — moss, mint, citrus peel — balanced with a restrained sweetness. Its flagship age-statement bottlings (12 and 18 Year Old) have become increasingly scarce in recent years as global demand for Japanese single malt has outstripped aged stock. Hakushu’s production also feeds into Suntory’s blended whiskies, including Hibiki, where its delicate complexity provides a vital counterbalance to Yamazaki’s weight.

A Bourbon-Cask Statement from Suntory’s Centenary Era
The Hakushu Bourbon Reserve 100th was released as part of Suntory’s centenary celebrations, honouring a century of Japanese whisky-making since the founding of Yamazaki in 1923. This expression focuses on maturation in American ex-bourbon barrels, which allow Hakushu’s inherent freshness and forest-floor character to remain prominent while adding layers of vanilla sweetness and gentle oak spice. The bourbon cask influence softens the distillery’s typical herbal intensity, creating a more approachable yet still distinctively Hakushu profile. As a non-age-statement release, it draws on a careful selection of younger and mature stocks to balance vibrancy with complexity.

Fresh green notes dominate — cut grass, young mint, citrus zest — typical of Hakushu’s alpine terroir, with bourbon cask influence adding soft vanilla, honeycomb, and a hint of coconut. Light floral undertones (acacia, white blossom) emerge with time, alongside delicate cedarwood and a whisper of forest floor.
Medium-bodied and clean, opening with sweet malt and orchard fruit (green apple, pear) before herbal complexity builds — spearmint, green tea, faint pine resin. The bourbon casks contribute caramel and toasted oak without overwhelming the delicate core, while a thread of white pepper and ginger root adds subtle spice through the mid-palate.
Medium length, refreshing and dry, with lingering mint leaf, subtle oak tannins, and a final note of lemon peel. The finish retains Hakushu’s signature forest character — clean, almost alpine, with a faint sweetness that fades gracefully into soft cedarwood.

This Hakushu expression is stored in our climate-controlled facility (maintained at 14°C and 70% relative humidity, monitored around the clock) to preserve both liquid integrity and packaging condition. Each bottle is inspected upon arrival and accompanied by provenance documentation, giving collectors absolute confidence in both product quality and chain of custody.

Best enjoyed neat in a tulip-shaped glass to concentrate the delicate forest aromatics, allowing 5 to 10 minutes of aeration to fully open the herbal and floral layers. This is an excellent aperitif whisky — its refreshing character and restrained sweetness make it ideal before a meal, particularly alongside light Japanese cuisine such as sashimi, grilled fish, or cold soba. A single drop of spring water can further reveal the mint and citrus undertones without diluting the whisky’s elegant structure.
