Cantillon Nath 2025 pours a hazy pale amber-gold with an almost imperceptible head — characteristic of traditional unfiltered lambic, with virtually no retention and a still, luminous body that hints at the wild fermentation within. The nose is immediately captivating: tart rhubarb stalks lead the way, accompanied by earthy barnyard funk, subtle notes of beetroot and fresh vegetation, and a delicate undercurrent of lemon rind and white-wine-like vinous complexity. As the beer opens up, hints of dried hay and light oak emerge, adding layers of depth typical of aged Brettanomyces character. On the palate, the mouthfeel is medium-bodied and lightly effervescent, with a soft, almost creamy texture that belies the beer’s inherent dryness.
The acidity is bright but refined — tart rather than aggressively sour — with rhubarb flavour weaving seamlessly through notes of citrus pith, green apple, and gentle woodiness. The finish is long, dry, and faintly tannic, with rhubarb and lemon lingering alongside a pleasing mineral edge. Youthful and still showing some reticence, the 2025 vintage possesses excellent aging potential and will reward cellaring over several years.
