Despite never receiving official classification in 1855, Chasse-Spleen has long been recognized as producing wines of Cru Classé quality, earning the designation of Cru Bourgeois Exceptionnel and consistently outperforming many classified estates.
The estate spans 103 hectares in the heart of the Moulis-en-Médoc appellation, making it one of the region’s largest and most important properties. Traditional Médoc Craftsmanship
The winemaking at Chasse-Spleen follows rigorous Médoc tradition, beginning with meticulous hand-harvesting and double sorting to ensure only the finest berries reach the cellar. Fermentation takes place in temperature-controlled stainless steel and concrete tanks, with each parcel vinified separately to preserve terroir expression. Extended maceration of 25 to 30 days extracts refined tannins while maintaining the wine’s characteristic elegance and freshness.
The wine matures for 12 to 15 months in French oak barrels, with approximately 40% new wood, allowing the estate to balance structure with fruit purity. The élevage is carefully monitored with regular racking and fining with egg whites before bottling, resulting in wines that combine power with refinement — the hallmark of great Moulis.
