Tasting Profile

3.7Untappd

Baladin Noël Gentile 2021 pours a deep, dark brown — reminiscent of a monk’s tunic — with a thick, compact, and surprisingly persistent off-white head that clings to the glass in fine lacing. The visual impression alone signals the richness to come. On the nose, the beer is immediately welcoming: roasted Piedmontese hazelnuts from the Langhe region take centre stage, supported by toasted cereals, dried nuts, a whisper of cocoa, and a faint Belgian yeast spiciness that ties everything together. The mouthfeel is full and satisfying, with a creamy softness that belies the 8.5% ABV — the alcohol is expertly integrated and barely perceptible.

On the palate, the flavours echo the nose faithfully: roasted cereal malt, bittersweet cocoa, and buttery hazelnut develop into a gently warming finish. Bitterness is restrained at around 24 IBU, keeping the beer well-balanced and approachable. The finish lingers with a pleasant nuttiness and mild roasted warmth, making this an ideal contemplative winter sipper. Cellaring for a further year or two will likely deepen the dried-fruit and malt complexity, though it drinks beautifully right now as a festive seasonal treat.

Food Pairing

Baladin Noel Gentile pairs beautifully with a classic Piedmontese hazelnut torta or a slice of panettone, where the shared Langhe nut character creates an elegant bridge between glass and plate. For a savoury match, aged Comté or a nutty Gruyère amplifies the roasted cereal backbone of this Belgian Strong Dark Ale, making each sip of the Baladin Noel Gentile feel richer and more layered.
