Handy demands patience. Pour it neat into a Glencairn and let it rest for ten minutes — the high proof needs time to open and the volatile alcohol to dissipate. Approach it with respect: the first sip will test your palate, but subsequent sips reveal the whiskey’s true architecture. A few drops of spring water unlock additional sweetness and tame the pepper without diluting the intensity. This is a winter whiskey, best enjoyed in a leather armchair with a heavy book, or as the foundation for a proper Sazerac cocktail built with Peychaud’s bitters and absinthe rinse. Pair it with dark chocolate (70% cacao or higher), aged Gruyère, or a medium-rare ribeye — anything that can stand up to its formidable presence.
