Tasting Profile
One & Dunn Grand Reserve pours an impenetrable jet-black with virtually no head — as expected from a behemoth pushing 18.7% ABV — leaving only faint, oily legs on the glass. The nose is an extravagant, slow-unfolding affair: deep molasses and dark chocolate are front and centre. Also followed by earthy rye oak, leather and espresso, with a warming bourbon sweetness woven throughout. On the palate, the body is extraordinarily thick, chewy and viscous, coating every surface of the mouth with remarkable smoothness for its strength. Flavours of dark chocolate, caramel toffee, roasted malt and dried dark fruits — think raisins, cherries and figs — build in waves, underscored by a persistent rye-spiced barrel character and a subtle char that adds complexity without harshness.
The finish is long, robust and warming, with lingering notes of oak, vanilla and molasses that evolve beautifully as the beer opens up in the glass. A collaboration between The Bruery (Placentia, CA) and Boulevard Brewing, this triple barrel-aged titan rewards patience; cellaring for one to three years will only deepen its extraordinary complexity. Food Pairing
The Bruery One & Dunn Grand Reserve imperial stout pairs magnificently with a wedge of aged Comté or Époisses. Also the creamy richness of the cheese amplifies the beer’s chocolate and rye notes into something truly revelatory. For a more indulgent match, serve alongside a dark chocolate fondant with salted caramel. Whose bittersweet intensity mirrors the beer’s layered barrel complexity and lingering molasses finish.
