Tasting Profile
The nose opens with waves of dark chocolate ganache and espresso, layered with bourbon-soaked vanilla and toasted marshmallow. Molasses and toffee add depth beneath a whisper of charred oak. On the palate, viscous and luxurious, eclipse-dark flavors of bittersweet cocoa merge with caramelized sugar, cold brew concentrate, and bourbon warmth. The pastry character emerges through graham cracker and brown butter notes. The finish is long and warming, with lingering dark chocolate, residual sweetness, and gentle alcohol heat that never overwhelms the dessert-like complexity.
Food Pairing
Pair with a rich chocolate lava cake or flourless torte, where the beer’s bourbon and coffee notes amplify the dessert’s intensity without competing. Alternatively, serve alongside aged Manchego or smoked Gouda, letting the beer’s caramel sweetness and roasted character complement the cheese’s nutty complexity while the carbonation cuts through richness.
