Omnipollo All The Vanilla pours an opaque, motor-oil black with the thinnest tan collar that dissipates almost immediately — a hallmark of barrel-aged imperial stouts at this density and 14.7% ABV. The nose is extraordinarily aromatic: waves of pure vanilla extract, sweet bourbon oak, dark chocolate ganache, and dried fig come forward first, followed by a secondary register of baking spice, molasses, and faint rye whiskey grain from the rye barrel component. On the palate, the mouthfeel is full-bodied to the point of luxurious — almost syrupy — with minimal carbonation that allows every flavour layer to unfurl slowly.

Sweetness is prominent but structured, underpinned by a restrained bitterness (65 IBU) that prevents the vanilla from becoming cloying. The seven-origin vanilla blend — sourced from Vanuatu, Uganda, Tahiti, the Comoros, Papua New Guinea, and two Madagascan varietals — creates a layered, multidimensional vanilla expression unlike any single-origin addition. Dark caramel, cocoa powder, and toasted oak carry through to a long, warming finish with a lingering bourbon-vanilla afterglow.
