Terroir & Grapes

The Sacred Stones of Châteauneuf

La Combe des Fous draws from exceptional vineyard sites within the Châteauneuf-du-Pape appellation in France’s Southern Rhône Valley. The terroir features the region’s legendary galets roulés—large rounded stones deposited by ancient glaciers—which absorb heat during the day and radiate it back to the vines at night, ensuring optimal ripening. The traditional Grenache-dominant blend is complemented by Syrah, Mourvèdre, and other permitted varieties from the appellation’s roster of thirteen noble grapes, creating remarkable depth and aromatic complexity.

Vinification & Ageing

Traditional Craft, Modern Precision

La Combe des Fous is crafted using time-honoured methods that respect Châteauneuf-du-Pape’s centuries-old traditions. Parcels are vinified separately to preserve individual character, with careful extraction to capture the full aromatic and phenolic potential of each variety. Extended maceration periods allow for optimal structure and depth whilst maintaining the wine’s inherent elegance and finesse.

The élevage takes place in a combination of traditional foudres and smaller oak barrels, allowing the wine to develop complexity without overwhelming the expressive fruit. This balanced approach creates a wine of remarkable harmony, where power and refinement exist in perfect equilibrium.

Vintage Character

2012 — A Classic Southern Rhône Vintage

The 2012 vintage in Châteauneuf-du-Pape produced wines of exceptional balance and classical elegance. Following a cool, wet spring that reduced yields naturally, the summer brought ideal ripening conditions with warm days and cool nights preserving remarkable freshness. The harvest took place under perfect conditions, yielding wines with superb aromatic definition, refined tannins, and impressive ageing potential.

This is a vintage that favoured producers committed to meticulous vineyard management, rewarding patience with wines of great purity and distinction. Now entering its drinking window, the 2012s reveal remarkable complexity whilst retaining the energy and precision to evolve beautifully for many years to come.

Tasting Notes

Power Meets Elegance

La Combe des Fous 2012 opens with a magnificent bouquet of ripe black cherries, crushed blackberries, and sun-warmed garrigue—wild thyme, rosemary, and lavender. Beneath lies a complex layer of liquorice, dark chocolate, leather, and subtle peppery spice. On the palate, the wine reveals exceptional concentration balanced by remarkable freshness, with velvety tannins supporting waves of dark fruit, black olive tapenade, and mineral-driven complexity. The finish extends majestically, offering echoes of roasted herbs, truffle, and sweet baking spices. This is Châteauneuf-du-Pape of the highest order—powerfully structured yet wonderfully refined, with the energy and depth to reward extended cellaring.

La Combe des Fous demands noble accompaniments that match its intensity and complexity. Consider slow-braised lamb shoulder with herbes de Provence, wild boar ragù with pappardelle, or grilled côte de bœuf with truffle butter. The wine’s savoury depth pairs magnificently with aged Comté, Époisses, or a selection of charcuterie featuring saucisson sec and pâté de campagne. For a vegetarian pairing, try wood-fired aubergine with tahini, roasted beetroot with goat cheese, or mushroom Wellington—the wine’s garrigue notes will harmonise beautifully with earthy, herb-driven preparations.
