Cantillon’s Cuvée Saint-Gilloise 2022 is a rare expression of Brussels lambic craftsmanship. Pouring a hazy golden-amber with lively carbonation, it opens with the brewery’s signature wild funk — earthy barnyard, damp hay, lemon zest, and aged oak. The palate finds an elegant tension between the natural tartness of two-year-old spontaneously fermented lambic and the refined bitterness of fresh Hallertau Mittelfrüh hops, added without disturbing the beer’s inherent delicacy. The finish is long, dry, and herbaceous, with fleeting white grape and green apple notes.
Food Pairing
Pair with aged Belgian cheeses such as Aged Gouda or Herve, whose salt and crystalline texture echo the lambic’s tartness and hop bitterness. Also excellent alongside oysters on the half shell — the briny minerality of the oyster harmonises beautifully with the wild acidity and earthy complexity of this traditional Brussels lambic.
