Following hand-harvesting and meticulous sorting, fermentation occurs in temperature-controlled stainless steel and concrete vats, with each parcel vinified separately to respect the diversity of the terroir. Maceration is carefully calibrated to extract pure fruit character and silky tannins without astringency.
The wine is aged for 16 to 18 months in French oak barrels, typically 60-70% new, selected from the finest coopers. The élevage is conducted with minimal intervention, allowing the wine’s natural structure and minerality to emerge while the oak integration remains subtle and refined, never overwhelming the pure expression of fruit and terroir.
