Bofkont’s Perziksaffraan (2025) is one of the most singular expressions to emerge from this celebrated nano lambic blendery in Kontich, Belgium. In the glass, it pours a luminous golden-amber hue, kissed with a faint blush from the peach maceration, topped by a fine, short-lived white head that quickly yields to a delicate effervescence. The nose is immediately captivating: sun-ripened white peach, dried apricot, and a whisper of floral honeysuckle are threaded through by the unmistakable warmth of saffron — earthy, slightly metallic, and exotic in equal measure. A faint underlying note of wild Brettanomyces funk and lactic tartness grounds the aromatics in lambic tradition.

On the palate, the mouthfeel is light-to-medium bodied with a lively, prickly carbonation. The sweetness is restrained and entirely fruit-forward, balanced by the bracing natural acidity characteristic of aged lambic. Flavours of fresh peach nectar, candied citrus peel, and a gentle spice from the saffron unfold in layers. The finish is long, dry, and pleasantly tannic, with a lingering golden-fruit warmth.
