Harvest is meticulously timed and conducted entirely by hand, with rigorous selection both in the vineyard and on sorting tables ensuring only pristine fruit enters the cellar. Fermentation occurs in temperature-controlled tanks with gentle extraction to preserve the wine’s natural elegance and aromatic complexity.

The wine is raised for 18 to 20 months in French oak barrels, with a judicious proportion of new wood that complements rather than dominates the fruit. Regular bâtonnage and minimal racking allow the wine to develop textural richness while maintaining its distinctive mineral signature and vibrant freshness.
