Samuel Batch 5 is a luminous Vermont saison built on buckwheat, spelt, and local wildflower honey, then patiently rested in wine barrels and bottle conditioned for many months. The 2021 release pours bright and effervescent, leading with lemon zest and gentle citrus before unfolding layers of nutty buckwheat, delicate spelt grain, and floral honey sweetness. Wine barrels lend a vinous, oak-tinged depth, while wild yeast contributes a softly funky, tart finish. Elegant, dry, and quietly complex, it drinks beautifully now yet rewards further cellaring with deepening vinous and farmhouse character.
