The Limestone Plateau of Saint-Émilion
Pavie Macquin’s vineyards occupy the Saint-Émilion limestone plateau, a geological treasure that combines shallow clay-limestone topsoil over a bedrock of astéries limestone rich in fossilized starfish. This unique terroir provides exceptional drainage while the limestone naturally regulates vine stress, encouraging deep root penetration and mineral complexity in the fruit. The vines average 45 years of age, with some parcels planted in the 1940s contributing extraordinary concentration.
The blend reflects Saint-Émilion’s Right Bank identity, with Merlot providing the estate’s signature velvety texture and generosity, while Cabernet Franc adds aromatic lift, freshness, and structural refinement. Cabernet Sauvignon, planted on the warmest slopes, contributes backbone and longevity to the final assemblage.
