Cantillon Fou’ Foune 2023 is one of the most coveted fruit lambics in the world, produced at the iconic Brussels lambic house from a blend of spontaneously fermented lambics aged 18 to 20 months, macerated with hand-selected Bergeron apricots. The nose opens with vivid ripe apricot and stone-fruit blossom, underpinned by the earthy, barnyard funk characteristic of traditional Cantillon fermentation. On the palate, a lively natural carbonation carries a bright, mouthwatering tartness balanced by soft apricot sweetness and a dry, yogurt-like finish of exceptional length. Bottled in August 2023.

Pair with a delicate washed-rind cheese such as Époisses de Bourgogne, whose creamy saltiness echoes the beer’s lactic tartness. Alternatively, serve alongside a classic foie gras terrine with brioche — the beer’s vibrant apricot acidity cuts through the richness for a memorable pairing.
