A brooding, richly layered Wee Heavy from the Atlantic coast of Ireland, the 2021 Diving Bell spent over two years slumbering in Nicaraguan rum casks, emerging silky and sumptuous. The nose opens with molasses, candied toffee, and dried tropical fruit, while the palate delivers wave upon wave of caramel malt, cooked banana, baking spice, and a whisper of roast barley. The rum-forward finish is warming and long, underpinned by a surprisingly delicate malt structure. A deeply satisfying sipping beer that rewards patience.
